I can’t remember the last time I bought prepared salad dressing. Honestly, homemade salad dressing is so much better and ridiculously easy to make. In addition to this vinaigrette version, I also regularly make a french dressing that I’ll need to post at some point.
Please make this recipe your own. You really can’t go wrong as long as you include an oil and an acid (in this case, lemon and mustard). Experiment with additional seasonings that you enjoy.
Ingredients:
- 1/2 cup extra-virgin olive oil
- 1/4 cup lemon juice (freshly squeezed)
- 1/2 teaspoon Dijon mustard
- 1 small shallot, diced
- 1 garlic clove, finely minced
- Kosher salt and freshly ground black pepper to taste
Combine all ingredients. If serving immediately, add to your prepared salad and toss to evenly distribute. If you’re making the dressing ahead of time, just cover and refrigerate until you are ready to use.
